Packed with oats, nuts, dark chocolate and dried cherries, these chocolate chip cookies hit the spot! Yet I used some healthier ingredients such as organic whole wheat flour instead of white. Coconut sugar instead of white sugar. Half coconut oil instead of full butter.
Therefore, I am calling these “Health-ish” Chocolate Chip Cookies. Definitely not healthy, but somewhere in between. Balance. 😉
Makes 24 cookies
1/4 cup coconut oil solid form
1/4 cup butter, room temp
2/3 cup coconut sugar
1/2 tsp vanilla extract
1 Tbl black strap molasses
1 large egg
3/4 cup whole wheat flour
1/2 tsp baking soda
1/2 tsp cinnamon
1/2 tsp sea salt or kosher salt
1-1/2 cups rolled oats
1/2 cup dark chocolate chips or chopped up chocolate bar
1/2 cup dried tart cherries, chopped
1/2 cup pecans, chopped
optional: sprinkle of flaked salt
In a large mixing bowl or bowl of stand up mixer, blend coconut oil, butter, coconut sugar, molasses, vanilla and egg . Blend until smooth.
In a separate bowl whisk together flour, baking soda, cinnamon and salt.
Stir the flour mixture into sugar mixture until just combined.
Stir in oats, chocolate, cherries and pecans. Mix to combine well.
Let batter sit in fridge while oven preheats (optional). This will create a thicker cookie.
Preheat oven to 350. Line 2 baking sheets with parchment paper.
Make approximately 1 inch balls with dough and place 2 inches apart on baking sheets.
Optional – Sprinkle with flakes of sea salt
Bake for 15 minutes.
