Ingredients:
1 cup packed dates, pits removed
1/4 cup peanut butter (or any nut butter)
1/4 cup maple syrup
1 Tbl Coconut Oil
1 cup roasted, unsalted almonds – loosely chopped
1-1/2 cups old fashioned rolled oats (may toast if preferred on baking sheet in 350 oven for 15 minutes)
1/4 tsp salt
1/2 cup dried cherries
Directions:
-Run the dates + 1 Tbl oats in a food processor until a paste is formed. Transfer to a mixing bowl.
-In a small saucepan, heat the peanut butter, coconut oil and maple syrup on medium- low heat until well combined and liquid. (about 5 minutes)
-While that is heating, Add almonds, oats, salt and cherries to the mixing bowl with dates.
-Add liquid mixture into the bowl and combine.
-Line an 8×8 baking dish with parchment paper
-Press the mixture firmly into the dish. Press down hard with fingers. You may wet your fingers if mixture is sticky.
-Place in the fridge for 20 minutes
-Turn over onto a cutting board and divide as desired.
Keep in sealed plastic container in fridge.
