Coconut Date Balls

Easy to make. Tried and true. Protein rich snack. Put it in the mix. You’re welcome.

Ingredients:

2 cups pitted Medjool dates   OR   1 cup dates and 1 cup unsweetened dried apricots

1 cup shredded unsweetened coconut, plus more for rolling

1 cup pecans or walnuts

1/4 cup raw cacao powder

1 Tbl liquified coconut oil

1/2 tsp vanilla extract

1/2 tsp cinnamon

 

Directions:

  • Place all ingredients (besides extra coconut) in a food processor
  • Process until well combined
  • Remove blade or transfer into bowl
  • Using hands, press about 2-3 Tbl dough into individual balls
  • Roll each ball in coconut and place on a cookie sheet
  • Place sheet in freezer for about one hour or fridge overnight

 

Store in airtight container in fridge or freezer

Makes about 12-16 balls
