1 cup dates, pitted
1 cup roasted almonds
1 Tbl chia seeds
4 Tbl coconut oil, in liquid form
pinch of kosher or sea salt
1/3 cup coconut powder or finely shredded
3 Tbl cacao nibs
Toast the coconut on a baking sheet until lightly browned, using a toaster oven (or, oven on broil)
Run the dates, almonds, chia seeds, coconut oil and salt in the food processor with regular blade.
Once combined, scrape into bowl. Mix in coconut and cacao nibs.
Form into balls squeezing in your palm. (They will hold and firm together more in the fridge.) Place on cookie sheet or plate.
Let rest in refrigerator for 30 minutes or until hardened.
Transfer to a container and store in the fridge.
