Whole Wheat Maple Banana Bread

This banana bread uses NO WHITE FLOUR and NO WHITE SUGAR (except for the sugar in the chocolate chips). Winning!

Ingredients:

1-1/2 cups whole wheat flour

1 tsp baking soda

1/2 tsp sea salt

1/2 tsp cinnamon

1/2 cup crushed walnuts

3 over ripe bananas, mashed

1/3 cup melted butter, slightly cooled

3/4 cup maple syrup

1/2 tsp vanilla extract

2 large eggs, whisked

1/2 cup dark chocolate chips

1 Tbl coconut oil for the pan

Directions:

Preheat oven to 375.

In a medium mixing bowl, combine flour, baking soda, salt, cinnamon and walnuts.

In a separate mixing bowl, combine bananas, butter, maple syrup, vanilla and eggs.

Pour wet ingredients into dry ingredients as well as chocolate chips.

Stir until just combined.

Lightly grease an 8 x 4 bread pan with coconut oil. (I like to use my fingers and then rub any excess into my hands and face) 🙂

Bake until golden brown and a knife comes out clean, about 45-50 minutes.

Let cool in the pan for 5 minutes before removing.
