3-4 cups leftover cold brown rice
2 garlic cloves, minced
1 inch piece fresh ginger, minced
1 onion, chopped
3 carrots, chopped
1/2 bag frozen peas
2-3 Tbl toasted sesame oil
2-3 Tbl tamari or soy sauce
1 tsp sambal chilli sauce
Heat 2 Tbl sesame oil in large saute pan.
Add garlic and ginger until fragrant.
Add onion and carrots and 1 Tbl tamari. Let soften about 3-5 minutes.
Add frozen peas. Cook 2-3 minutes more until heated.
Add rice to the pan. Mix all together with 2 Tbl tamari and chilli sauce as desired. Press into the hot pan until rice is heated.
Push the rice out the sides creating a hole in the center. Crack an egg into the center and whisk with fork or spoon.
Once the egg has cooked (just like a scrambled egg), mix into rice.
Voila! Easy Fried Rice!
