Simple Sauteed Greens

Some days the question of “What’s for Dinner?” can linger all day with no answer…

On those kind of days I go simple. Obviously, my body is not screaming for something it craves or “wants”… so I give it something it NEEDS! Greens!

2 ways to enjoy this simply:

1. Have over a scoop of grains like quinoa, brown rice or kamut.

2. Use the greens as a base, and top with a fried egg for protein.



2 Tbl toasted sesame oil

1 onion, chopped

2 cloves garlic, minced

1 inch piece fresh ginger, minced

6-8 mushrooms of any variety, sliced

1 bunch of greens any variety (kale, collards, bok choy, chard), chopped

2 Tbl tamari or soy sauce

1 Tbl sambal chili sauce

Heat oil in pan, add onion, garlic and ginger. Cook until fragrant and softens, 3-5 minutes. Add mushrooms and season. Cook until softens and lightly browns, 5-7 minutes. Deglaze pan with a splash of water or wine, scraping up the brown bits and stirring. Add greens and tamari, cook until wilted. Add chilli sauce if desired.
