Raw Superfood Cookies

I originally started with Food Babe’s Peanut Butter Cookies which are simply great on their own.

1 cup Rolled Oats

1 cup Medjool dates (pitted)

1/2 cup Peanut Butter

Combine in food processor, make into balls, press with the back of a fork and transfer to fridge for 20 minutes.  Keep in fridge.

But why not take it up a notch and add cacao, flax and goji berries?

Raw Superfood Cookies

1 cup rolled oats

1 cup Medjool dates (pitted)

1/2 cup peanut butter

1/4 cup coconut oil in liquid form

3 Tbl raw cacao powder

1 Tbl flax seeds

pinch of salt

handful of goji berries

Place all ingredients except goji berries in food processor until blended. Scrape into bowl and mix in goji berries with hands. Form into balls and flatten. Transfer to fridge or freezer for 20 minutes. Keep in fridge.
