Pad Thai Salad


This salad can be made with or without rice noodles or soba buckwheat noodles.

Suggested Vegetable Ingredients:

Rice Noodles or Buckwheat noodles, cooked

3 carrots, shredded

1 daikon radish, shredded

1 cucumber, peeled, cut and sliced thin

2 cups snow pea pods, chopped

1/2 head Chinese or Napa cabbage, sliced thin

Mung Bean sprouts

4 scallions, sliced

1 red bell pepper, sliced


For the dressing:

1/4 cup rice wine vinegar

1/4 cup toasted sesame oil

1/2 tsp fish sauce

4 Tbl tamari or soy sauce

2 tsp Siracha or Sambal Chili Sauce

2 limes, squeezed

Garnish on top:

2 cups cilantro, chopped

1/2 cup peanuts, chopped


Combine some or all of the vegetables suggested above. Or add in your own ideas.

Salt the vegetables and let sit while preparing dressing.

Toss dressing with veggies.

Add cilantro and peanuts.

Toss and enjoy!
