Peanut Soba Noodles


Peanut Soba NoodlesDressing
2 large garlic gloves, minced
2 Tbl toasted sesame oil
1/4 cup tamari or soy sauce
1/4 cup rice wine vinegar
1Tbl chili sauce or other hot sauce

1/2 cup peanut butter

1/4 cup water or more


1 lb dried soba noodles or whole grain linguine or rice noodles


1 red pepper

1 cucumber, peeled and de-seeded

1/2 napa cabbage or red cabbage

1 bunch scallions

2-3 carrots

1/2 daikon radish or 5-6 red radish


1 bunch cilantro

sesame seeds


Combine dressing ingredients in a bowl or blender and mix until smooth. Set aside.

Cook noodles. Drain in a colander. Transfer back to pot. Drizzle with additional sesame oil to moisten.  Pour half of dressing in with noodles and combine to coat noodles.

In a food processor run the pepper, cabbage, cucumber and scallions through the slicing blade. Run carrots and radish through the shredding blade. Alternatively, slice and shred all veggies.

Add to noodles with remaining dressing. Combine all together.

Garnish with toasted sesame seeds and cilantro.

Serve at room temp or cold.
