Roasted Beets with Balsamic Beet Greens

If you haven’t guessed, I am obsessed with beets!  Perhaps it is my Eastern European heritage?  Whatever it is, I can’t get enough.

Most people have never tried a fresh roasted beet and I am here to tell you that it is the bomb!  Do not be discouraged by the canned beets your parents forced you to eat.  This is a whole new dimension and every skeptic I have introduced thus far is raving.  One of my clients calls it “the beef of the vegetable world”.  The flavor is nutty, rich and sweet.  The health benefits are numerous.

Ingredients:

3-4 Roasted Beets, cut into bite size pieces

1 Bunch beet greens, chopped (stems and greens separated)

1 Onion, chopped

1/2 cup walnuts, chopped

1 Tbl Balsamic vinegar

2 Tbl Olive oil

Salt and pepper

Goat cheese

Directions:

-Sautee onion and beet green stems in olive oil until softened (5-7 minutes). Seasoning with S&P. Add in beet greens until wilted.

-Toss with the beets, walnuts, balsamic and drizzle of olive oil, salt and pepper.

-Top with crumbled goat cheese.
