Asian Salmon Burgers with Wasabi Mayo

3-4 lbs. fresh salmon filet (skin removed)

4 scallions, chopped

3 inch piece of fresh ginger, peeled and grated

1 red pepper, finely chopped

1 lemon, juiced

Kosher salt

1 egg

1 Tbl chili garlic sauce

1 cup cooked brown rice or panko crumbs

2 Tbl Tamari or soy sauce

2 Tbl Toasted sesame oil

For Mayo:  

combine 4 Tbl mayo (or greek yogurt) with 2 tsp wasabi paste and juice of 1/2 lemon


-cut salmon into large chunks and run through food processor with regular blade until blended into a paste

-transfer to bowl and season with salt and pepper, lemon juice, toasted sesame oil, tamari, chili sauce

-stir together with egg, rice and veggies

-form into burgers and grill 7-8 minutes each side

Enjoy with Asian Kale Slaw on a bun or on a bed of greens

Makes 12 burgers
