Cucumber Salad

As a health coach, I often encourage my clients to buy way too many vegetables than seems normal and then make it their goal to eat them before they go bad.

So what do I do when I have a bag of cucumbers that are starting to get a little slimy? Wash them off, freshen them up and chop up this beautiful salad that the whole family will want to munch on.  Great on its own as a side or snack, have on top a bed of greens, or in a rice bowl.  It feels great to know all those vitamins, minerals, phytonutrients and macronutrients all were consumed.  Much better than tossing them in the garbage!

6 small Cucumbers, chopped

6 Compari Tomatoes, chopped

1/4 Red Onion, diced

2 cup Parsley, chopped

Feta cheese

Olive oil

Salt and Pepper
