Mashed Potatoes Plus


Why make regular mashed potatoes, when you can add more flavor and nutrition with no less work?

5-8 Red Potatoes, chunked

3-4 Parsnips, peeled and chunked

3-4 Carrots, peeled and chunked

2 Cups Fresh Spinach, chopped

Fresh thyme

Salt and Pepper

-Boil the potatoes, parsnips and carrots until soft. Reserve some liquid then drain.

-Smash the vegetables with the water*, season with salt and pepper.

-Add in spinach and fresh thyme, stir to wilt into the mash.

*May also add in broth, butter, sour cream or however else you like your mashed potatoes 🙂

Makes a delicious side dish!
