Quinoa Salad


This easy to make Quinoa Salad is great to pack for lunch or have for dinner on a bed of greens or on the side with protein of your choice.


Chopped vegetables of your choice (I used yellow pepper, scallions, cherry tomatoes, radicchio, cucumber)

Chopped fresh parsley

Quinoa (cooked and cooled to room temperature)

Fresh squeezed lemon juice

Olive oil

Feta cheese

Salt and pepper
